Mom, used to make these, when we were little. When I finally found the recipe in her cookbook, we started to make them for her.
I don’t know if mom has it still. The last time I remember seeing it, it was covered in cooking oil, and flour.
I have been making it for so long now, I make it out of my head. Hopeful my guesstimates are correct.
I remember making this by remember there are 4 wet ingredients and 4 dry.
2 1/2 cups of Flour
3 tbsp of Sugar
3 tbsp of Baking Powder
Salt to taste. I usually just sprinkle in the batter.
2 1/2 of Milk
2 eggs scrambled
2 tsps of Vanilla
3 tbsp of Cooking Oil
I first mix the dry ingredients, together. making a small bowl in the middle for the wet to be added.
In a separate bowl, I scramble the eggs, then milk, vanilla, and oil.
Mix into the dry ingredients until you see a ribbon form in the batter add milk if too thick.
Prewarm frying pan, with cooking oil on medium. Warm make a test pancake in pan. For some reason my first pancake always turns out badly. (oddly someone always eats it)
Pour batter in to pan ( I use a large cooking spoonful.) Look for bubbles throughout the pancake, (mainly at the edges.) before turning. flip.
Serve,
Mom used to serve it with butter, and Syrup!
